Ingredients
  

  • 1 pound salmon fillets skin-on
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 lemon zested and juiced
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon fresh dill chopped
  • 1 garlic clove minced
  • 1 teaspoon Dijon mustard

Method
 

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  2. Pat the salmon fillets dry with paper towels.
  3. Drizzle olive oil over the skin side of the salmon and season with salt and pepper.
  4. Place the salmon skin-side down on the prepared baking sheet.
  5. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  6. While the salmon is baking, prepare the lemon herb sauce by combining lemon zest, lemon juice, parsley, dill, garlic, and Dijon mustard in a small bowl. Mix well and set aside.
  7. Once the salmon is done, remove it from the oven and let it rest for a couple of minutes. Serve with the lemon herb sauce drizzled on top.
