In a large bowl, combine the ground chicken, chopped spinach, grated carrots, breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, black pepper, and paprika. Mix until well combined.
Add the egg to the mixture and stir until fully incorporated.
Preheat a large skillet over medium heat and add enough cooking oil to cover the bottom.
Using your hands, form the chicken mixture into small nugget shapes, about 1 to 2 inches in size.
Carefully place the nuggets in the hot skillet, cooking in batches if necessary to avoid overcrowding. Fry for about 4-5 minutes on each side, or until golden brown and cooked through.
Remove the nuggets from the skillet and place them on a paper towel-lined plate to absorb excess oil.
