Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 cup fresh blackberries
For the frosting:
  • 1/2 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1/4 cup unsweetened cocoa powder
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • Fresh blackberries for garnish

Method
 

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, cocoa powder, sugar, baking soda, and salt until well combined.
  3. Add the softened butter, eggs, vanilla extract, and buttermilk to the dry ingredients. Mix until smooth and well blended.
  4. Gently fold in the fresh blackberries until evenly distributed throughout the batter.
  5. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  6. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and allow the cupcakes to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  8. While the cupcakes are cooling, prepare the frosting. In a medium bowl, beat the softened butter until creamy.
  9. Gradually add the powdered sugar and cocoa powder, mixing until combined.
  10. Add the milk and vanilla extract, and beat until the frosting is light and fluffy.
  11. Once the cupcakes are completely cool, frost them with the chocolate frosting and top each with a fresh blackberry.
