Step-by-Step Instructions
  1. Prepare whipped cream by pouring 1 cup of heavy cream into a large mixing bowl and whipping on medium-high speed until stiff peaks form, about 5 minutes.
  2. In a separate bowl, mix 1 cup of mascarpone cheese, 1 cup of ube halaya, ½ cup of sweetened condensed milk, and 1 teaspoon of vanilla extract until smooth. Gently fold in the whipped cream.
  3. Soak ladyfingers by quickly dipping each into a mixture of ½ cup of whole milk and 1 teaspoon of ube extract for about 1-2 seconds.
  4. Layer the jars by placing soaked ladyfingers at the bottom, followed by ube cream. Repeat until jars are almost full.
  5. Sprinkle crushed ube cookies or graham crackers on top. Add extra whipped cream if desired.
  6. Cover and chill for at least 2 hours, preferably overnight, before serving.
