- Prepare whipped cream by pouring 1 cup of heavy cream into a large mixing bowl and whipping on medium-high speed until stiff peaks form, about 5 minutes.
- In a separate bowl, mix 1 cup of mascarpone cheese, 1 cup of ube halaya, ½ cup of sweetened condensed milk, and 1 teaspoon of vanilla extract until smooth. Gently fold in the whipped cream.
- Soak ladyfingers by quickly dipping each into a mixture of ½ cup of whole milk and 1 teaspoon of ube extract for about 1-2 seconds.
- Layer the jars by placing soaked ladyfingers at the bottom, followed by ube cream. Repeat until jars are almost full.
- Sprinkle crushed ube cookies or graham crackers on top. Add extra whipped cream if desired.
- Cover and chill for at least 2 hours, preferably overnight, before serving.
