Ingredients
  

  • 2 cups cooked white rice preferably day-old
  • 4 large eggs
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 1 teaspoon garlic minced
  • 1 teaspoon green onions chopped (for garnish)
  • Salt and pepper to taste

Method
 

  1. In a large skillet, heat the vegetable oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  2. Add the cooked rice to the skillet, breaking up any clumps. Stir-fry the rice for about 3-4 minutes until heated through.
  3. In a bowl, whisk together the eggs, soy sauce, sesame oil, salt, and pepper until well combined.
  4. Push the rice to one side of the skillet. Pour the egg mixture into the empty side and let it cook for about 1-2 minutes until it starts to set.
  5. Gently scramble the eggs, then mix them with the rice until everything is well combined and heated through.
  6. Remove from heat and garnish with chopped green onions before serving.
