Ingredients

For the Crust
  • 2 cups crushed Frosted Animal Cookies Add sweetness and nostalgic flavor; substitute with iced cookies if needed.
  • 1/2 cup butter Binds the crust together and adds richness; use minimally based on cookie moisture.
For the Filling
  • 16 oz cream cheese Provides the creamy base of the cheesecake; Neufchâtel can be used for a lighter option.
  • 3/4 cup granulated sugar Sweetens and balances the flavors; any type works well.
  • 1/4 cup flour Helps stabilize the filling; omit for a gluten-free version.
  • 1 cup sour cream Contributes tanginess and creaminess; Greek yogurt can be a substitute.
  • 1 tbsp vanilla extract Enhances overall flavor; homemade extract adds a lovely touch.
  • 3 eggs Provides structure; substitute with flaxseed meal mixed with water for an egg-free version.
  • 1 cup chopped Frosted Animal Cookies Adds delightful chunks throughout the filling.
For the Ganache
  • 1 cup white chocolate chips Adds sweetness and creaminess; can substitute with a high-quality chocolate bar.
  • 1/2 cup heavy whipping cream Used for the ganache, adding richness; coconut cream is a great dairy-free option.
  • 1 drop pink gel food coloring For visual appeal in the ganache; omit if you prefer a classic look.

Equipment

  • 9-inch springform pan
  • Mixing Bowl
  • Roasting Pan
  • Whisk

Method

Step-by-Step Instructions
  1. Preheat your oven to 325°F (163°C) and lightly grease a 9-inch springform pan.
  2. In a mixing bowl, combine crushed frosted animal cookies with melted butter, stirring until well combined. Press into the bottom of the prepared pan and bake for 10 minutes. Allow to cool completely.
  3. Fill a larger roasting pan with hot water halfway up the sides for a water bath.
  4. Lower the oven temperature to 300°F (148°C). Blend cream cheese, sugar, and flour on low speed until smooth.
  5. Add sour cream, vanilla extract, and eggs one at a time, mixing well after each addition.
  6. Gently fold in the chopped frosted animal cookies into the cheesecake batter.
  7. Pour half the cheesecake batter into the cooled crust, sprinkle some cookie chunks on top, then pour the rest of the batter over.
  8. Place the springform pan into the prepared water bath and bake for 1 hour and 25 minutes.
  9. Turn off the oven and leave the cheesecake inside with the door ajar for 30 minutes.
  10. Transfer the cheesecake to the refrigerator and chill for 5-6 hours, or ideally overnight.
  11. To create the ganache, heat heavy whipping cream, pour it over white chocolate chips, and whisk until smooth.
  12. Once chilled, pour the ganache over the cheesecake and decorate with whipped cream, colorful sprinkles, and cookie pieces.
