In a mixing bowl, combine the Greek yogurt, peanut butter, honey (or maple syrup), vanilla extract, and a pinch of salt. Stir until the mixture is smooth and well combined.
Fold in the mini chocolate chips until evenly distributed.
Line a baking sheet with parchment paper. Using a tablespoon or small cookie scoop, drop spoonfuls of the mixture onto the prepared baking sheet, spacing them about 1 inch apart.
Once all the mixture is on the baking sheet, gently flatten each bite with the back of a spoon to form a small disc shape.
Place the baking sheet in the freezer and freeze for at least 2 hours, or until the bites are firm.
Once frozen, transfer the bites to an airtight container or zip-top bag and store in the freezer for up to 2 months.
