Ingredients
  

  • 1 cup Greek yogurt plain or vanilla
  • 1/2 cup creamy peanut butter
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips
  • Pinch of salt

Method
 

  1. In a mixing bowl, combine the Greek yogurt, peanut butter, honey (or maple syrup), vanilla extract, and a pinch of salt. Stir until the mixture is smooth and well combined.
  2. Fold in the mini chocolate chips until evenly distributed.
  3. Line a baking sheet with parchment paper. Using a tablespoon or small cookie scoop, drop spoonfuls of the mixture onto the prepared baking sheet, spacing them about 1 inch apart.
  4. Once all the mixture is on the baking sheet, gently flatten each bite with the back of a spoon to form a small disc shape.
  5. Place the baking sheet in the freezer and freeze for at least 2 hours, or until the bites are firm.
  6. Once frozen, transfer the bites to an airtight container or zip-top bag and store in the freezer for up to 2 months.
