Start by seasoning the steak cubes with salt, black pepper, and dried thyme. Toss to coat evenly.
Set your Instant Pot to the sauté function and add the olive oil. Once hot, add the seasoned steak cubes in a single layer. Sear for about 2-3 minutes on each side until browned. You may need to do this in batches to avoid overcrowding.
Remove the steak bites from the pot and set aside.
In the same pot, add the butter and minced garlic. Sauté for about 1 minute until the garlic is fragrant but not browned.
Return the steak bites to the pot and stir to coat them in the garlic butter.
Close the lid of the Instant Pot, set the valve to sealing, and cook on high pressure for 2 minutes.
Once the cooking time is up, perform a quick release of the pressure.
Carefully open the lid, stir the steak bites, and garnish with fresh parsley before serving.
