Step-by-Step Instructions
  1. Preheat your slow cooker to HIGH for a shorter cooking time or LOW for a traditional slow braise.
  2. In the slow cooker, add the beef, chopped onions, crushed garlic, and grated ginger. Sprinkle in the chili or chili powder, cumin, coriander, turmeric, and salt. Add diced bell peppers, beef stock, chopped tomatoes, tomato purée, and mango chutney; stir well until everything is evenly combined.
  3. Cover the slow cooker and cook on HIGH for 4-5 hours or LOW for 6-7 hours until the beef is tender.
  4. About 30 minutes before it's done, stir in the garam masala and cover again.
  5. For a thicker sauce, mix cornflour with water until smooth and stir into the curry, cooking for an additional 10-15 minutes.
  6. Serve the curry over basmati rice, naan, or poppadoms, garnished with fresh coriander if desired.
