In a mixing bowl, combine the mashed bananas and melted butter, mixing until well combined.
Stir in the honey, beaten egg, and vanilla extract until smooth.
Sprinkle the baking soda and salt over the mixture, then mix in the flour and cinnamon (if using) until just combined. Be careful not to overmix.
If desired, fold in the chopped nuts.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
