  • 2 cups cooked chicken shredded or cubed, rotisserie recommended
  • 1 cup mayonnaise Kewpie mayo adds extra flavor
  • 2 tablespoons chili crisp adjust to taste
  • 1 tablespoon white sesame seeds
  • 1 tablespoon black sesame seeds
  • 1 cup roasted salted peanuts or substitute almonds/cashews
  • 1/4 cup green onions finely chopped
  • to taste salt
  • to taste black pepper
For the Sandwich
  • 6 slices sandwich bread thick-sliced or gluten-free
  • optional lettuce red or green leaf

Method
 

Instructions
  1. In a medium bowl, combine cooked chicken, mayonnaise, and chili crisp. Stir until well-coated and creamy. Add sesame seeds, peanuts, and green onions, mixing evenly.
  2. Season the mixture with salt and black pepper to taste. Start with a pinch of each and adjust as needed.
  3. Lay three slices of bread on a cutting board. Generously scoop the chicken salad mixture onto each slice. If using, add a layer of lettuce.
  4. Place the remaining slices of bread on top. Cut each sandwich diagonally for easy handling.
  5. Serve immediately or wrap tightly in plastic wrap to store for later.
