Ingredients
  

  • 2 cups rolled oats
  • 2 cups unsweetened almond milk or any milk of choice
  • 1 cup Greek yogurt plain or vanilla
  • 1/4 cup honey or maple syrup
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1/4 teaspoon salt

Method
 

  1. In a large mixing bowl, combine the rolled oats, almond milk, Greek yogurt, honey or maple syrup, lemon zest, lemon juice, vanilla extract, and salt. Stir until well combined.
  2. Gently fold in the fresh blueberries.
  3. Divide the mixture evenly into four jars or airtight containers.
  4. Cover and refrigerate overnight (or at least 4 hours) to allow the oats to soak and soften.
  5. In the morning, give the oats a good stir and add additional toppings if desired, such as more blueberries, a drizzle of honey, or a sprinkle of nuts.
