Ingredients
  

  • 4 salmon fillets about 6 ounces each
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • Fresh parsley chopped (for garnish)
  • Lemon wedges for serving

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. In a small bowl, whisk together the olive oil, lemon juice, lemon zest, black pepper, garlic powder, and salt until well combined.
  3. Place the salmon fillets on the prepared baking sheet, skin side down. Brush the lemon pepper mixture generously over the top of each fillet.
  4. Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  5. Remove from the oven and let it rest for a few minutes. Garnish with chopped parsley and serve with lemon wedges on the side.
