  • 3 pounds Beef Chuck Roast well-marbled cut
  • 1 teaspoon Salt for seasoning
  • 1 teaspoon Pepper for seasoning

  • 1/2 cup Balsamic Vinegar high-quality
  • 3 tablespoons Fresh Rosemary chopped
  • 4 cloves Garlic crushed
For the Veggies
  • 2 medium Onions sweet yellow or sweet
  • 4 medium Carrots chopped
  • 1 pound Baby Potatoes or regular potatoes
For Cooking
  • 2 cups Beef Broth choose low-sodium
  • 2 tablespoons Cornstarch optional thickening agent

Method
 

Step-by-Step Instructions
  1. Generously sprinkle the beef chuck roast with salt and pepper on all sides. Allow to sit for 5 minutes.
  2. In a medium bowl, whisk together balsamic vinegar, garlic, and rosemary until combined. Pour over the beef.
  3. Optionally, sear the beef on medium-high heat for 3-4 minutes on each side until browned.
  4. Place the onions, carrots, and baby potatoes in the bottom of the slow cooker.
  5. Add the beef on top of the vegetables and pour the marinade over it.
  6. Pour beef broth around the beef and vegetables, careful not to disturb the layers.
  7. Cover the slow cooker and set it to low for 8 hours or high for 4 hours.
  8. About 30 minutes before serving, create a cornstarch slurry if sauce is too thin.
  9. Once cooking is complete, shred the beef with two forks and mix with veggies and sauce.
