- Generously sprinkle the beef chuck roast with salt and pepper on all sides. Allow to sit for 5 minutes.
- In a medium bowl, whisk together balsamic vinegar, garlic, and rosemary until combined. Pour over the beef.
- Optionally, sear the beef on medium-high heat for 3-4 minutes on each side until browned.
- Place the onions, carrots, and baby potatoes in the bottom of the slow cooker.
- Add the beef on top of the vegetables and pour the marinade over it.
- Pour beef broth around the beef and vegetables, careful not to disturb the layers.
- Cover the slow cooker and set it to low for 8 hours or high for 4 hours.
- About 30 minutes before serving, create a cornstarch slurry if sauce is too thin.
- Once cooking is complete, shred the beef with two forks and mix with veggies and sauce.
