  • 2 cups rolled oats
  • 1 cup almond butter or peanut butter
  • 1/2 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup diced fresh peaches or canned peaches, drained
  • 1/2 cup chopped nuts walnuts or pecans
  • 1/4 cup mini chocolate chips optional

Method
 

  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal.
  2. In a large mixing bowl, combine the rolled oats, almond butter, honey (or maple syrup), vanilla extract, cinnamon, and salt. Mix until well combined.
  3. Gently fold in the diced peaches, chopped nuts, and mini chocolate chips if using.
  4. Spread the mixture evenly in the prepared baking dish, pressing it down firmly with a spatula or your hands.
  5. Bake for 25-30 minutes, or until the edges are golden brown.
  6. Allow the bars to cool in the pan for at least 15 minutes, then lift them out using the parchment paper and let them cool completely on a wire rack before cutting into squares.
