  • 1 cup graham cracker crumbs
  • 4 tablespoons unsalted butter melted
  • 2 tablespoons granulated sugar
  • 8 ounces cream cheese softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup strawberries hulled and sliced
  • 1 cup blueberries

Method
 

  1. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
  2. Divide the mixture evenly among serving glasses, pressing it down to form a crust layer.
  3. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
  4. Gradually add powdered sugar and vanilla extract, mixing until fully incorporated.
  5. In a separate bowl, whip the heavy cream until stiff peaks form.
  6. Gently fold the whipped cream into the cream cheese mixture until combined.
  7. Layer the cheesecake mixture over the graham cracker crust in each glass.
  8. Add a layer of sliced strawberries, followed by a layer of blueberries.
  9. Repeat the layers until the glasses are filled, finishing with a layer of berries on top.
  10. Chill the parfaits in the refrigerator for at least 2 hours before serving to allow the flavors to meld.
