Method
- In a blender, combine the cubed watermelon, coconut milk, sweetened condensed milk, lime juice, and salt. Blend until smooth and well combined.
- Taste the mixture and adjust sweetness if desired by adding more sweetened condensed milk. Blend again if necessary.
- Pour the watermelon mixture through a fine mesh strainer into a large pitcher to remove any pulp, if desired.
- Chill the otai in the refrigerator for at least 1 hour before serving.
- To serve, fill glasses with ice cubes and pour the chilled otai over the ice. Garnish with fresh mint leaves if desired.

- For a tropical twist, add a cup of diced pineapple to the blender along with the watermelon.
