  • 1 pound chicken tenderloins

  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper optional for heat
  • 1/4 cup breadcrumbs optional for extra crunch

Method
 

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, combine the olive oil, chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper (if using). Mix well to create a marinade.
  3. Add the chicken tenderloins to the bowl and toss them in the marinade until they are evenly coated.
  4. If using breadcrumbs, sprinkle them over the coated chicken tenderloins for added texture.
  5. Arrange the tenderloins in a single layer on the prepared baking sheet.
  6. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
  7. Remove from the oven and let the chicken rest for 5 minutes before serving.
