Ingredients
  

  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 medium onion sliced
  • 1 bell pepper sliced (any color)
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 1 tablespoon black pepper adjust to taste
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 2 green onions chopped (for garnish)

Method
 

  1. In a bowl, combine the chicken pieces, soy sauce, and cornstarch. Mix well and let marinate for 15 minutes.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the sliced onion and bell pepper. Stir-fry for 3-4 minutes until they begin to soften.
  4. Add the minced garlic and ginger to the skillet and stir-fry for an additional 1-2 minutes until fragrant.
  5. Return the chicken to the skillet and add the black pepper, oyster sauce, rice vinegar, and sugar. Stir well to combine and cook for another 2-3 minutes until heated through.
  6. Serve hot, garnished with chopped green onions.
