Ingredients
  

  • 2 cups cooked chicken shredded
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheese cheddar or Mexican blend
  • 1/4 cup chopped fresh cilantro
  • 1 ripe avocado
  • 1/2 cup sour cream
  • 1 tablespoon lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder

Method
 

  1. In a skillet, heat the olive oil over medium heat. Add the shredded chicken, chili powder, cumin, garlic powder, onion powder, paprika, salt, and black pepper. Stir to combine and cook for about 5 minutes until heated through.
  2. While the chicken is cooking, prepare the Avocado Lime Crema. In a blender or food processor, combine the avocado, sour cream, lime juice, salt, and garlic powder. Blend until smooth and creamy. Adjust seasoning to taste.
  3. Warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side or until pliable.
  4. Assemble the tacos by placing a generous portion of the spicy chicken on each tortilla. Top with shredded lettuce, diced tomatoes, shredded cheese, and a drizzle of the Avocado Lime Crema. Sprinkle with chopped cilantro.
  5. Serve immediately and enjoy!
