Ingredients
  

  • 1 cup raw cashews soaked in water for at least 4 hours and drained
  • 1/2 cup water
  • 1/4 cup nutritional yeast
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1-2 fresh jalapeños seeds removed and finely chopped
  • 1/4 cup diced red bell pepper
  • 1/4 cup chopped green onions
  • 1/4 cup fresh cilantro chopped
  • 1/2 cup breadcrumbs for coating
  • Oil spray for greasing

Method
 

  1. Preheat your oven to 375°F. Line a baking sheet with parchment paper and lightly grease it with oil spray.
  2. In a blender or food processor, combine the soaked cashews, water, nutritional yeast, lemon juice, garlic powder, onion powder, smoked paprika, and salt. Blend until smooth and creamy.
  3. Transfer the cashew mixture to a mixing bowl and fold in the chopped jalapeños, red bell pepper, green onions, and cilantro until evenly combined.
  4. Using your hands, form the mixture into small balls, about 1 inch in diameter. Roll each ball in breadcrumbs to coat evenly.
  5. Place the coated balls on the prepared baking sheet. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy on the outside.
  6. Let the bites cool for a few minutes before serving. Enjoy them warm with your favorite dipping sauce.
