  • 1 cup ricotta cheese
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries hulled and sliced
  • 1 tablespoon lemon juice
  • 1 French baguette sliced into 1/2-inch pieces
  • 2 tablespoons olive oil
  • Fresh mint leaves for garnish optional
  • Pinch of salt

Method
 

  1. Preheat your oven to 400°F.
  2. Arrange the baguette slices on a baking sheet and brush both sides lightly with olive oil.
  3. Bake for about 8-10 minutes or until golden brown and crispy.
  4. In a medium bowl, combine the ricotta cheese, honey, vanilla extract, and a pinch of salt. Whip until smooth and creamy.
  5. In another bowl, toss the sliced strawberries with lemon juice and a little extra honey if desired.
  6. Once the crostini are baked and cooled slightly, spread a generous layer of the whipped ricotta on each slice.
  7. Top with the lemony strawberries and garnish with fresh mint leaves if using.
  8. Serve immediately for the best texture and flavor.
