Preheat your oven to 350°F.
In a large skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat if necessary.
Add the diced onion and minced garlic to the skillet, cooking until the onion is translucent, about 3-4 minutes.
Stir in the uncooked rice, diced tomatoes, tomato sauce, diced bell peppers, Italian seasoning, salt, and black pepper.
Pour in the broth and bring the mixture to a boil.
Once boiling, reduce heat to low and cover, simmering for about 20 minutes or until the rice is tender.
Transfer the mixture to a greased 9x13 inch baking dish.
Sprinkle the shredded cheese evenly over the top.
Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
Let it cool for a few minutes before serving.
