  • 2 cups sugar snap peas trimmed and halved
  • 8 ounces burrata cheese
  • 1 cup cherry tomatoes halved
  • 1/4 cup fresh basil leaves torn
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the sugar snap peas, cherry tomatoes, and torn basil leaves.
  2. Drizzle the olive oil and balsamic vinegar over the salad mixture. Season with salt and pepper to taste.
  3. Gently toss the salad until all ingredients are well coated.
  4. Tear the burrata cheese into pieces and place it on top of the salad.
  5. Serve immediately, or chill in the refrigerator for about 15 minutes to enhance the flavors before serving.
