Ingredients
  

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter melted
  • 2 tablespoons granulated sugar
  • 16 ounces cream cheese softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 cups fresh peaches diced
  • 1 cup mixed berries strawberries, blueberries, raspberries
  • Fresh mint leaves for garnish optional

Method
 

  1. In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Chill in the refrigerator for 30 minutes to set.
  2. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  4. Spread half of the cheesecake mixture over the chilled crust. Layer half of the diced peaches and mixed berries on top. Add the remaining cheesecake mixture and spread it evenly. Top with the remaining fruit.
  5. Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
  6. Before serving, garnish with fresh mint leaves if desired. Carefully remove the sides of the springform pan and slice the cheesecake into wedges.
