Preparation Steps
- In a mixing bowl, combine 1 cup of all-purpose flour, 1 tablespoon of sugar, and 1/4 teaspoon of salt. Cut in 1/2 cup of cold butter until the mixture resembles coarse crumbs. Gradually add 3-5 tablespoons of ice water until a cohesive dough forms. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
- Prepare your filling by tossing 1 cup of sliced strawberries with 2 tablespoons of sugar, 2 tablespoons of flour (or cornstarch), 1 tablespoon of lemon juice, and 1 teaspoon of lemon zest. Let the mixture sit for 10 minutes.
- Preheat your oven to 350°F (177°C) and prepare a baking sheet with parchment paper.
- Roll out the chilled dough on a floured surface to about 1/8 inch thickness. Cut out 6 circles, approximately 5 to 6 inches in diameter.
- Place the dough circles on the prepared baking sheet. Spoon the filling into the center of each circle, folding the edges over the filling. Dot with butter.
- Brush the edges of each galette with beaten egg. Sprinkle coarse sugar over the crust for extra texture.
- Bake in the preheated oven for about 30 minutes until the crust is golden brown and the filling is bubbling.
