Preparation Steps
  1. In a mixing bowl, combine 1 cup of all-purpose flour, 1 tablespoon of sugar, and 1/4 teaspoon of salt. Cut in 1/2 cup of cold butter until the mixture resembles coarse crumbs. Gradually add 3-5 tablespoons of ice water until a cohesive dough forms. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
  2. Prepare your filling by tossing 1 cup of sliced strawberries with 2 tablespoons of sugar, 2 tablespoons of flour (or cornstarch), 1 tablespoon of lemon juice, and 1 teaspoon of lemon zest. Let the mixture sit for 10 minutes.
  3. Preheat your oven to 350°F (177°C) and prepare a baking sheet with parchment paper.
  4. Roll out the chilled dough on a floured surface to about 1/8 inch thickness. Cut out 6 circles, approximately 5 to 6 inches in diameter.
  5. Place the dough circles on the prepared baking sheet. Spoon the filling into the center of each circle, folding the edges over the filling. Dot with butter.
  6. Brush the edges of each galette with beaten egg. Sprinkle coarse sugar over the crust for extra texture.
  7. Bake in the preheated oven for about 30 minutes until the crust is golden brown and the filling is bubbling.
  8. Cool on the baking sheet for at least 10 minutes before serving. Pair with vanilla ice cream for an indulgent treat.
