Ingredients
  

  • 2 cups fresh corn kernels about 4 ears of corn
  • 1 ripe avocado diced
  • 1 cup cherry tomatoes halved
  • 1/2 red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1 lime juiced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili powder optional

Method
 

  1. In a large bowl, combine the fresh corn kernels, diced avocado, halved cherry tomatoes, chopped red onion, and cilantro.
  2. In a small bowl, whisk together the lime juice, olive oil, salt, black pepper, and chili powder (if using).
  3. Pour the dressing over the salad and gently toss to combine, being careful not to mash the avocado.
  4. Taste and adjust seasoning if necessary, adding more salt or lime juice as desired.
  5. Serve immediately or chill in the refrigerator for 30 minutes to allow flavors to meld.
