In a blender, combine the sliced strawberries, coconut milk, honey (or maple syrup), vanilla extract, and lemon juice. Blend until smooth.
Taste the mixture and adjust sweetness if needed by adding more honey or maple syrup.
Stir in the shredded coconut until evenly distributed.
Pour the mixture into ice pop molds, leaving a little space at the top for expansion.
Insert sticks and freeze for at least 4-6 hours or until completely solid.
To remove the ice pops, run warm water over the outside of the molds for a few seconds, then gently pull out the pops.
