Sweet Creamy Strawberry Coconut Ice Pops are a delicious and refreshing treat perfect for hot days.

Ingredients
  

  • 2 cups fresh strawberries hulled and sliced
  • 1 cup coconut milk canned or carton
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded coconut unsweetened
  • 1 tablespoon lemon juice

Method
 

  1. In a blender, combine the sliced strawberries, coconut milk, honey (or maple syrup), vanilla extract, and lemon juice. Blend until smooth.
  2. Taste the mixture and adjust sweetness if needed by adding more honey or maple syrup.
  3. Stir in the shredded coconut until evenly distributed.
  4. Pour the mixture into ice pop molds, leaving a little space at the top for expansion.
  5. Insert sticks and freeze for at least 4-6 hours or until completely solid.
  6. To remove the ice pops, run warm water over the outside of the molds for a few seconds, then gently pull out the pops.

Notes
