- In a large mixing bowl, combine shredded chicken, cream cheese, diced sausage (if using), green onions, cheddar cheese, hot sauce, and Cajun seasoning. Mix thoroughly until creamy.
- Lay an egg roll wrapper in a diamond shape, spoon 2 tablespoons of filling at the bottom corner, fold the bottom corner over, tuck in the sides, and roll away from you. Brush with beaten egg to seal.
- Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
- Gently place a few egg rolls in the hot oil and fry for about 3–4 minutes, turning until golden brown. Use a slotted spoon to transfer to paper towels to drain.
