For Wrapping and Frying
  • 12 pieces egg roll wrappers or rice paper for gluten-free
  • 2 cups vegetable oil for frying

Step-by-Step Instructions
  1. In a large mixing bowl, combine shredded chicken, cream cheese, diced sausage (if using), green onions, cheddar cheese, hot sauce, and Cajun seasoning. Mix thoroughly until creamy.
  2. Lay an egg roll wrapper in a diamond shape, spoon 2 tablespoons of filling at the bottom corner, fold the bottom corner over, tuck in the sides, and roll away from you. Brush with beaten egg to seal.
  3. Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
  4. Gently place a few egg rolls in the hot oil and fry for about 3–4 minutes, turning until golden brown. Use a slotted spoon to transfer to paper towels to drain.
  5. Serve hot, arranged on a platter with your favorite dipping sauces.
