Preheat your oven to 375°F (190°C).
In a large bowl, combine the sliced zucchinis, feta cheese, chopped mint, ricotta cheese, Parmesan cheese, egg, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
Place the pre-made pie crust in a 9-inch pie dish and crimp the edges as desired.
Pour the zucchini mixture into the pie crust, spreading it evenly.
Drizzle olive oil and lemon juice over the top of the tart.
Bake in the preheated oven for 35-40 minutes, or until the tart is golden brown and the filling is set.
Let the tart cool for 10 minutes before slicing and serving.
